Oil-in-water emulsion

Oil-in-water emulsions are mixture where tiny droplets of fat or oil are dispersed throughout a continuous water-based phase. Common examples we encouter in baking include milk and heavy cream. In both of these, the milkfat droplets are suspended throughout the watery portion of the mixture.
