Lecithin

A group of fat-like molecules called phospholipids that help oil and water stay mixed. Egg yolks naturally contain lecithin, which is one reason they are useful for making emulsions such as mayonnaise, cake batters, and sauces. Lecithin can also come from sources such as soybeans and sunflower seeds.
