Gluten

Gluten is the stretchy protein network that forms when cereal-based grain flours are mixed with water. (Cereal-based grains include: wheat, rye, and barley amongst others.)

Two key proteins contained in the starch called glutenin and gliadin form a matrix or "net" that helps doughs and batters trap gas, hold their shape, and develop structure during baking.
