
Fructose is a naturally occurring sugar found in fruits, honey, and some vegetables. It is a monosaccharide, meaning it consists of a single (“mono” = 1) sugar molecule (“saccharide” = single sugar unit). It is about 150% as sweet as sucrose (white table sugar). In baking, we often use fructose when we add fruit or in syrup form via honey or agave nectar.
